Guacamole

I have two rules for guacamole: 1) I love garlic, but it does not belong in guacamole, and 2) It must have cilantro – I can’t really do anything for the people who don’t like cilantro. Sorry.

My recipe for guacamole is based on the one my father showed me when I was a teenager. It is simple to make and delicious, and great to bring to a party.

Guacamole

10 minutes, makes about 2 cups

 

2 ripe Haas avocados

juice of ½ of a lime (or lemon)

2 Tbsp. liquid from jarred jalapeños

1 Tbsp. onion, finely chopped

1 tomato or a handful of grape tomatoes, chopped

½ bunch cilantro, finely chopped

2 Tbsp. jarred jalapeños, chopped

½ tsp. kosher salt

½ tsp. freshly ground pepper

 

  1. Peel and mash the avocado in a bowl with the back of a fork. If you like your guacamole smooth, mash more. If you like it chunky, mash less.
  2. Add lime juice and liquid from jalapeños. The acidity will help keep the avocado from turning brown too quickly.
  3. Soak the chopped onion in water for a few minutes and drain. This will remove some of its bite.
  4. Add onion, tomato, cilantro, jalapeño, and salt and pepper and mix thoroughly.
  5. Taste and adjust seasonings. You may want to make it hotter by adding more jalapeño or its juice, or it may need more salt or lime juice.

 

Serve with tortilla chips or grilled skirt steak or chicken tacos (or all three).

  • Hi Max, Sorry I’m one of those who doesn’t like cilantro, but I do like your guacamole. I made the pineapple dish with the basil. Delicious and simple enough, even for my son!

    • I use whichever is available, but if I have both on hand, lately I’ve been going with lime. Not sure why, it’s just what I’ve been feeling lately. But lemon works just as well too.
